Scaling up the extraction of phospholipids from sweet whey by electrodialysis with bipolar membrane, study of eco-efficiency and production of phospholipid-enriched cheeses
Description
In recent years, dietary phospholipids, particularly those from dairy products, have gained importance due to the positive impacts they can have on human health. Dr. Bazinet's team recently developed a new process based on electrodialysis with bipolar membrane (EDMB) to recover phospholipids in sweet whey, a co-product generated by the dairy industry. Thus, this project is part of a vast research project aiming a valuation of bio-food co-products and the development of eco-efficient processes (VITALE Consortium), through innovative and sustainable approaches based on electromembrane processes.
The objectives of this project are:
1) Scaling up the precipitation of whey phospholipids by EDBM;
2) Analyze the composition of the separated fractions obtained;
3) Produce and characterize model miniature cheddar cheeses*;
4) Carry out an eco-efficiency and technical-economic study of the phospholipid enrichment of cheeses (if time allows it).
*This objective will take place at the Saint Hyacinthe Food Research Center (Quebec, Canada).

$20000 per year for 2 years.
The position is full-time (100%) and placed at the department of Food Sciences, Laval University (Quebec, Canada), under the supervision of Dr Laurent Bazinet and the co-direction of Dr. Marie-Claude Gentès (Agriculture and Agri-Food Canada), for a fixed term of two years. Salary of 20 000$ /year (CAD) excluding social benefits and faculty grants.
